Chop the garlic coarsely
Cut the chorizo into thin slices
Diced your onions. I used frozen ones here.
Heat up the rice bran oil. Sauté the onions. Add salt, sugar and white pepper. Add sesame oil and then cook until onions are caramelised. Set aside
Sauté the chorizo in medium heat. Adjust the heat accordingly or else it will smoke the entire kitchen
Add the chopped garlic to the chorizo and stir till the chorizo starts to shrink
Add the onions and stir fry until the garlic starts to brown
Add the rice to the mixture
Add the thick soy sauce and soy sauce to the rice mixture. Stir well to ensure the rice are well coated with the sauces
Beat an egg to the rice mixture. Wait a minute or two and then fluff the rice quickly to ensure they are well coated with egg
Stir fry the rice until they look dry and fluffy. By now the fragrance will start to fill the whole kitchen
Add the baby spinach and mixed it with the rice until they started to wilt
