How to make light n' fluffy easy whey (or milk) biscuits


Combine 3 c flour, 1/4 c sugar, 4 tsp baking powder and 1 tsp baking soda.

Add 1/2 c butter and cut into flour mixture.

Until the butter is well mixed in.

Add 1 egg and 11/4 c whey (leftover from homemade yogurt OR USE EQUIVALENT AMOUNT OF MILK) and stir with a fork until moistened.

Handle as little as possible, fold the dough over a few times and them pat dough down and cut with a cookie cutter. Continue until all dough is used.

Place on lightly oil spritzed pan.

Makes 20

Bake at 450 (if convection, 475 for regular oven) 9 minutes.

Serve with molasses and butter or with jam.
